We’ll begin this course with the fundamentals, but our primary focus is about making bread that uses a Poolish Yeasted Starter like French baguettes and English muffins. A poolish starter is a liquid yeasted starter used in enriched doughs with yeast, yeasted laminated doughs, and breadmaking. Do not confuse a yeasted poolish starter with a natural starter. A natural starter is made from a natural microorganism found in its raw ingredients and bacteria present in the environment, whereas a poolish has a sweet, nutty flavor that lends well for breads or breakfast pastries where little acidity is required.
